Orange & coconut shrimps

An easy recipe for delicious shrimp meal! Original taste and healthy ingredients 🙂

Ingredients for 2 portions:

  • 200g shrimps (cooked and shells removed)
  • 1 orange
  • 100ml coconut milk
  • 1/2 tablespoon coconut oil
  • black rice and quinoa (1/2 cup each)
  • coriander (dried)
  • chili pepper for taste
  • salt


  1. Cook rice and quinoa (about 15min). Note: they can be cooked together in the same pot
  2. Peel orange, cut into pieces and squeeze a bit. Grate a little bit of the orange skin to enhance the taste
  3. Place the shrimps together with the orange pieces, juice and skin in a bowl and put in the fridge for at least half an hour
  4. In a wok or frying pan, melt the coconut oil and add the content of a bowl (shrimps and orange). Cook for about 5min
  5. Add coriander, pepper, salt and coconut milk and let simmer for few more minutes
  6. Add cooked rice and quinoa mix to the pan (it will absorb some of the liquid)
  7. Decorate with more orange for serving

Coconut Pancakes

Coconut Pancakes

Just a perfect Weekend breakfast. Even better with freshly picked wild raspberries 🙂 These fluffy pancakes will provide you with energy for a productive day without a big calorie intake!

They are delicious just by themselves, but you can serve them with favourite jelly, maple syrup, butter or yoghurt.

Since the raspberry season has just started and I'm a bit crazy about berries, I decided to wake up a little bit earlier and go for a refreshing morning walk to collect some of these beauties wildly growing around my house 🙂
