Tomatoe&mozzarella zucchini boats

Fast, easy and light dinner recipe - all you need on a lazy evening! Zucchini season is on, so we have to make the most of it 🙂 Idea number one: stuffed zucchini boats.  

Ingredients for 2 portions:

  • 1 zucchini (about 400g)
  • bunch of basil leaves
  • 2 cloves of garlic
  • 2 medium tomatoes (can be cherry)
  • 200g spinat (I used frozen)
  • 1 ball of mozzarella (125g)
  • 1 tablespoon olive oil for serving (extra ca. 120kcal)
  • salt
  1. Cut the zucchini in half and hollow the middle to form a 'boat'
  2. Put the collected zucchini flesh into the frying pan together with garlic and cook for a while until some water evaporates
  3. Add the spinach and cook more until the consistency becomes easy to stuff the zucchini (not much water left). Spice to taste
  4. Insert basil leaves and fresh, chopped tomatoes into the zucchini 'boats'
  5. Put the prepared stuffing on top and cover with mozzarella cheese
  6. Bake for about 15min in 180C
  7. Serve with olive oil
